Crafted from carefully selected fruit grown in the estate’s oldest vineyards, where yields are intentionally reduced to enhance concentration and character. This wine is harvested by hand in small crates and vinified with a gentle, traditional approach. Soft pressing and temperature-controlled fermentation preserve freshness, precision, and varietal expression, while the wine’s structure gives it excellent aging potential. Bright straw yellow in color, it opens with elegant aromas of spring herbs, acacia, linden blossom, apricot, fresh almond, and citrus, layered over a subtle mineral note. The palate is persistent and beautifully balanced, combining vibrant acidity, richness, and savory minerality, finishing with the variety’s signature hint of bitter almond. A natural pairing for sushi, salmon, and raw fish dishes.
