The Scopa Bianco is certified organic, made from a blend of Catarratto and Grillo. The Catarratto undergoes 36 hours of maceration , while the Grillo is direct-pressed. Fermentation occurs in stainless steel, and the wine is bottled unfined and unfiltered. It is medium-bodied and dry, showing precise notes of apricot, green apple, lemon, almond, anise, mint, and tea, with no oak influence. Pairs beautifully with prawns or a pistachio ricotta tagliatelle.
