The grapes are fully destemmed and fermented for eight days at a controlled temperature, with regular pumping and gentle pressure from below to maintain contact with the skins. This careful extraction highlights fresh fruit character while achieving balanced color. Made from the ancient Schiava varietal, the wine is light and elegant, with low tannins and a lively, dry profile. Mild and harmonious on the palate, it shows subtle notes of bitter almond and finishes with persistence. Pairs nicely with lighter dishes like prosciutto and melon, as well as simple grilled sausages.
