The vines are planted in Montigny-lès-Arsures on the “Chagnon” and “Leuvrin” hillsides, and in Arbois at “Montesserin.” Exposed mainly to the west and south, the soils are rich in iridescent marl and limestone clay, the preferred soils of trousseau. The grapes are hand-picked, sorted, and 100% destemmed before maceration and fermentation in vats, followed by nine months of aging. The result is a cuvée that will create a sensation when paired with game in cranberry sauce, red meats, or red fruit-based desserts.
