For this red, the three varieties – cinsault, grenache, mourvèdre – are harvested at different times and thus vinified separately. The bunches are mainly destemmed – with a varying, small quantity of stems included – and fermented with native yeasts and without sulfur in concrete tanks. The cinsault, which is the majority variety, sees a brief five-to-six-day maceration. The three varietal wines are blended in March and aged in concrete. The wine is bottled unfiltered and unsulfured and usually lands under 12% by intention—a light, fresh, easy-drinking style.
