Hand-harvested Cab Franc grapes are fully destemmed and fermented spontaneously in stainless steel using indigenous yeasts. A maceration of 22 days with gentle pump-overs and occasional punch-downs allows for careful extraction before the wine is pressed and returned to tank to complete fermentation. The wine is then aged for 18 months in a combination of mostly sandstone amphora and seasoned ex-Château Latour barrels, before bottling with only a minimal addition of sulfur. Expressive aromas of ripe blueberry and warm baking spices lead into a velvety, juicy palate. Rich fruit, supple texture, and a balanced structure create a wine that is both generous and refined.
