Harvested in the early morning, the small bunches and berries contribute to the wine’s impressive concentration and extract. The grapes were crushed into stainless steel tanks and inoculated with yeast, with frequent pump-overs to develop color and flavor. After fermentation, the wine underwent malolactic fermentation in older barrels before aging for an additional 16 months in a combination of new French and American oak. Aromas of raspberry, cherry, and pencil shavings lead to rich flavors of plum and ripe berries, balanced by supple tannins. A versatile Pinotage, it pairs beautifully with South African classics such as bobotie, bunny chow, and braai, as well as roast duck, lamb casseroles, and chocolate soufflé.
