This wine captures the spirit of traditional Barossa with a modern twist—where rich, generous fruit is balanced by vibrant natural acidity, all crafted through minimal intervention winemaking. Whole bunches of Shiraz were hand-harvested, gently crushed, and naturally fermented in open fermenters for seven days, with hand plunging twice daily. After fermentation, the wine was carefully basket-pressed into a mix of old French oak (30%) and stainless-steel tanks (70%) for 18 months of maturation. It was then bottled without filtration or fining, with only a small addition of sulfur. With a deep violet-purple hue and a textured character, the nose unveils aromas of dark chocolate, soy, lavender, and rain-kissed eucalyptus. The lush palate is filled with ripe berries, supported by smooth, wave-like tannins that flow effortlessly.
