Crafted with precision and freshness in mind, the Verdejo grapes were harvested in the early morning to preserve acidity and aromatics. After swift de-stemming, the grapes underwent a brief cold maceration before gentle pneumatic pressing and cool fermentation in stainless steel at around 60°F. Malolactic fermentation was prevented to retain the wine’s bright, crisp character, and it was cold stabilized and lightly filtered before bottling. The result is a zippy, dry, and easy-drinking Verdejo with vibrant notes of lime zest, green melon, and a subtle hint of fennel on the finish. Crisp and clean, it lands on the palate like a splash of citrus and sea spray—refreshing and perfect for warm days or light fare.
