Planted in 1995 on granite soils with loam and schist, the vineyards are certified organic. The grapes are hand-harvested, gently crushed, and pressed before fermenting with indigenous yeasts in stainless steel. The wine rests on its fine lees for eight months, followed by an additional 18 months of aging in tank. Bottled unfined and unfiltered with minimal sulfur, it preserves a pure expression of site and variety. Pale lemon in color, it opens with aromas of green apple, lemon, white blossom, wet stone, and a hint of white pepper. The palate is dry and light-bodied, with bright acidity and flavors of crisp apple, pear, Meyer lemon, and wild herbs, finishing with a clean, mineral edge.
