Fermented on the skins for approximately seven days, the wine is then pressed and aged for 10 to 12 months in older French oak barrels. Deep ruby in color, it reveals layered aromas of blackberry, blackcurrant, and plum, complemented by notes of spice and cedarwood. The palate is full-bodied and silky, with rich dark fruit framed by savory hints of tobacco and oak. Fresh acidity and smooth tannins provide balance, leading to a long, lingering finish. A natural match for venison bourguignon or ribeye with black pepper sauce, though equally enjoyable on its own.
