Whole clusters are harvested by hand and then gently pressed, with primary fermentation carried out in stainless steel using indigenous yeasts. The wine then undergoes secondary fermentation in pressurized tanks following the Martinotti (Charmat) method, with extended lees contact. Straw yellow in the glass, it opens with fragrant aromas of white and yellow fruits layered with delicate white flowers. The palate is lively and refreshing, offering notes of apple, lemon, grapefruit, yellow plum, pear, elderflower, and jasmine. Fine, persistent bubbles and a clean, lightly bitter finish give the wine balance and elegance.
