The grapes were hand-harvested from early to mid-February, then fermented using a mix of whole clusters and destemmed fruit. After nine days on the skins with gentle pumpovers, the wine was pressed into a combination of stainless steel and neutral oak. The wine was then aged for ten months before bottling without fining and with only a small addition of sulfur. Syrah forms the backbone of this blend, with Cinsaut bringing lifted red fruit and Carignan adding depth and color. On the nose, aromas of raspberry, black cherry, and herbes de Provence lead the way. The palate is lively and expressive, offering notes of plum and orange zest, bright aromatics, smooth tannins, and a clean, polished finish.
