Crafted using the ancestral method, these wines are bottled before primary fermentation is finished, without the addition of secondary yeasts or sugars. The entire process begins with hand-harvested pinot noir, which are foot-tread to release juices and allow for skin contact and color extraction. The fruit was then whole-cluster pressed and settled for 24 hours prior to being racked off its gross lees.
