This cider is made by blending Stayman Apples and Local Pawpaws. This fruit is often forgotten but Pawpaws are the second largest edible fruit native to North America, behind Squash. This fruit begins to ripen and fall from their trees around the same time as peak apple season. They are often described as a mix between a banana, Mango and Pineapple, known for their tropical flavor profile and custardy texture. This is where the name “Hillbilly Banana” comes from, a common nickname for PawPaws. The cider is dry, crisp, and tropical with nice acidity, making it a great option for any season.
