The grapes were hand-selected, harvested, and chilled before gentle pressing and fermentation with wild yeasts. 20% of the wine was aged in French oak, while the wine was kept on its fine lees with regular stirring.. Elegant and perfumed, it offers aromas of citrus, tropical fruit, white flowers, and white peach, followed by a medium-bodied palate of bright pear, lemon meringue, and summer melon with a subtle hint of toasted brioche. Fine acidity keeps the wine fresh and focused through the lingering finish. Pair with roasted Kingklip and seasonal vegetables, lightly spiced calamari salad, herb-crusted goat cheese, or clam chowder.
