The winemaking process involves two-thirds of the grapes being crushed and fermented in stainless steel tanks at a controlled temperature for about 20 days. The other third goes through slight drying in the fruit room, followed by crushing and a blending of the two components to trigger a second fermentation. Hence the name “Due” (“Two”). The resulting wine is a garnet red color. The nose has fruity aromas with notes of cherry, small berries, spicy notes, and floral nuances. It’s full and velvety in the mouth, with soft and balanced tannins. Pair with first courses with meat sauces, grilled or roasted red meats, game, or medium-aged cheeses.
