The Esterlin Champagne house practices alcoholic fermentation at 16°C. They then block the second fermentation in order to preserve the original acidity of the wine as well as its freshness. The absence of malolactic fermentation preserves the aromas and develops the wine's ability to age. Their Rosé Eclat, made with 59% pinot meunier and 41% chardonnay, is a fresh, firm, and straight wine with aromas of smooth red fruits, cherries, and raspberries. It has very pleasant, fine tannins and a beautiful length in mouth.
