Harvested at night to preserve freshness, the grapes are pressed and co-fermented on full solids using wild yeast. Fermentation is temperature-controlled, followed by six months of maturation on lees in stainless steel to build texture and complexity. This co-fermented blend brings together the finest traits of four Italian white varieties imported by Chalmers. The nose is vibrant and expressive, offering notes of tangerine, lemon aspen (a fragrant native citrus), pear blossom, and golden apple. On the palate, it’s dry and luminous, with a gentle textural grip on the finish that adds depth. Bright, versatile, and immensely drinkable, this is a wine that complements any dish, setting, or crowd.
