Lemon peel, sage leaf (wild Mediterranean sage, not the garden variety), rhubarb root, chinotto, juniper berry, and anise are extracted individually and balanced with lemon juice and Demerara cane sugar (pressed directly from sugar cane to retain its molasses character and subtle mineral notes) at four grams per can. Mediterranean sea salt provides mineral finish. Onda is green and tart, almost savory—more kitchen than garden.
