At the Arratzain cider house in Usurbil, Spain, the apple trees look down from the top of the mountain. Sagardo Naturala is made from 20 to 30 different native Basque apple varieties: 60% for acid, 30% for bitterness, and 10% for sweetness, all from certified organic estate trees.
