Grown in Chitry, just southwest of Chablis, the aligoté grapes go through a malolactic fermentation, which adds a lovely middle palate to its vibrant, fruity, and mineral qualities. The fermentation is carried out in temperature-controlled stainless steel tanks. When the process is done, you have a clean, unoaked, and fresh wine, best paired with river fish or the early part of the dinner, such as an arugula salad.
